Vineyards and olive groves are co habitants, almost everywhere around the globe. Bird In Hand are proud of both, their olives have been met with prestigious accolades throughout the world of gastronomy. Harvested during the chill of night to capture and preserve the uniqueness of Arneis, parcels are crushed and destemmed, a minor part is sent to French oak barrels for vinification, the balance is treated to a long, cool ferment. Textural and defined, the crisp dry white of choice to serve alongside pinenut calamari, rice stuffed vegetables and all Mediterranean fare.

Bird In Hand Cabernet Sauvignon

A compilation of bespoke parcels Cabernet, hand chosen off a tally of superior, limited yield sites across the premier viticultural precincts of Adelaide Hills, Macclesfield, Birdwood and Kersbrook. Bunches are crushed into fermenters for a week on skins, followed by transfer to a luxuriously high proportion of new French oak barriques for eighteen months maturation before assemblage. Full bodied, fleshy, long silky tannins in support of the defined Cabernet muscularity, its cassis, cedar and black bramble opulence to match with entrecote, Jus and shallot.

For aspirants in pursuit of nothing but the best, hand picked and whole bunch pressed into a high proportion of new French oak for a wild indigenous yeast ferment, completion of malolactic and nine months lees stirring battonage. Each barrel is pointedly encouraged to complete its course as an individual wine until the final assemblage. Intensely aromatic of white nectarines, apricot and grapefruits over subtle creamy cashew and nougat richness, a richly textured, weighty palate framed by bright acidity and a veneer of the most delicate, showroom oak.

Bird In Hand established vines on a choice piece of terroir among the undulating idylls of Valley Clare, to secure harvests of Riesling in a very different style to the crisp high altitudes fruit grown at Woodside. Hand picked grapes are whole bunch pressed to extract nothing but the cleanest free run juices, a pure and pristine Riesling wine of striking elegance. Floral and fragrant with hints of lanolin, jasmine and quartz, the quintessential Clare Valley hallmarks of heady lime and flinty limestone, crisp and delicate with beautiful citrus acidity.

Adelaide Hills make mighty Merlot, the cooler temperatures, elevated aspects and sheltered mesoclimes are Shangri La for the exceptional ripening and outstanding tannin development worthy of the finest Medoc. Hand picked throughout the fogswept hours of early morning, the worthiest hand picked bunches are treated to a week of ferment before a course of fourteen months in a selection of artisanaly coopered French oak barriques. Redolent of mulberries, plum and festive spice, its fine silky tannins in support of the graceful, elegant high altitude fruit.

There's a single block of Montepulciano along Bird In Hand Road at Woodside in the northern Adelaide Hills, a warmer site with rocky, well drained soils, perfectly suited for Italians. The seaside influence of Gulf of St. Vincent, the cloud trapping rise of Mount Lofty Ranges and generous Australian sun, all conspire to form a unique diurnal temperature shift that wine grapes love. A completely hand made wine, crafted from fruit grown to the mineral rich soils above an historic, eponymously named gold mine.

The great grape of Sicily, a big flavoursome style, characterised by its generosity and upfront bramble fruit richness. Nero d'Avola loves the sunshine, Bird In Hand have planted their stocks to the warmest slopes on Adelaide Hills. Treated to a week and a half of ferment on skins for optimal extractions, a proportion of the berries are left whole for complexity. Sixteen months in French oak has built a wine of intensity, seamlessness and palate weight, its spicy black olive savouryness, plummy flesh and lithe, sweet gummy tannins resolve on a lingering, peppery finish.

A harvest of Pinot Noir grown to the estate vineyard at Woodside, gingerly crushed and treated to a judicious term of skin exposure for a blush of rakish salmon pink hues. A long cool ferment retains the vivaciousness of fruit, chicly attired in comely pink bottle, fashioned by design industry celebre Dion Lee. Lifted lipstick perfumes and cherry blossom notes, ripe red berry flavours and the crunch of orchard fruits are enhanced by a crisp, clean and dry finish. From parcels of Pinot Noir, planted to the foot of tailings, left behind by waves of prospectors who pursued their fortune amongst the open pits and mines on Adelaide Hills during the gold rush of the 1850s. Crushed and destemmed straight into the press with minimal time on skins to extract the perfect pink, its blushing lipstick hues presage a cornucopia of lifted strawberry and cherry blossom characters, ruby grapefruit and luscious jube over a length of tasty, toothsome tannins, the perfect Rosé for lazy afternoons or late night soirées.

An unassuming young winegrower took his chances in 1997 with the re-emerging viticultural precinct of Adelaide Hills. Andrew Nugent planted vines and an olive grove on a hundred acres of land along Bird in Hand Road at Woodside. His efforts have since claimed a staggering list of awards for excellence on the international wine show circuit. Bird In Hand's preoccupations with growing and crafting the finest quality Adelaide Hills Sauvignon Blanc have earned the highly prestigious George Mackey nomination for most outstanding exported wine.

The Adelaide Hills are renowned for Sauvignon Blanc. Four hundred metres above sea level, the Bird In Hand vineyards face north and boast deep, well drained red earth, formed from metamorphic rock. Batches of the purest free runs, pressed from choice parcels of Sauvignon Blanc are individually fermented at cooler temperatures to retain fresh, lively fruit characters and crisp varietal definition. Although the Adelaide Hills do provide an unfair edge in terms of quality, it's always a thrill for the Bird In Hand team to taste the fruit of their endeavours in the finished wine.
 
Very light staw hue. Bouquet of greenery and herbaceousness. Citrus flavours, honeydew and tropical fruits, especially passion and grapefruits with a touch of brisk minerality. The palate is fresh and intense, expressing the signature Adelaide Hills style, finishing long, lively and crisp, striking the perfect balance between intensity and elegance. In 1997, an unassuming young viticulturalist and winemaker, Andrew Nugent, chanced his arm in the emerging wine region of the Adelaide Hills

Nugent grew up next door to Penfolds at Magill and his formative wine years were spent in South Australia's McLaren Vale. It was here that he honed his craft as a viticulturalist, vineyard manager and winemaker. In 1997, Nugent planted vineyards and an olive grove on 100 acres on Bird in Hand Road, Woodside. The road itself was named after the Bird in Hand gold mine that operated in the district in the 1850s. The Nugent family now live and work on the picturesque property, reflecting the strong sense of community in the Adelaide Hills.

Andrew exudes a quiet but steely determination to grow Bird in Hand into one of the world's great wineries. He lives and works at the winery. Nugent knows the best thing he can do for the community is grow and produce the best wine and olives he can. Bird in Hand's success will be the community's success. A high tide lifts all the boats in the bay. At Bird in Hand Nugent has assembled the best team of people, he's painstakingly selected the perfect terroir and is well on his way.

The sense of community emanates from Andrews mother Joy, who is the visionary behind Nurse Link, providing palliative care in the home. She has now gone on to form NurseLink Foundation, a charity to advance nursing in the spirit of Florence Nightlingale and change the way we care for the frail and elderly.

Four hundred metres above sea level, the vineyards face north and boast deep, well drained red earth, formed from metamorphic rock. To extend the winemaking range available to Bird in Hand, another vineyard in the famous wine growing region of Clare has been aquired to provide fruit for world class Riesling and Shiraz.

The Nest Egg range comprises Bird in Hand's finest wines from each vintage. The varieties released in each Nest Egg series are dependent on near perfect growing seasons. The wines are created with slow deliberation and stored meticulously in the finest French oak. Each bottle is individually numbered and beautifully presented.

At the same time the Nugent family established Bird in Hand vineyards, it also began growing olives. Three years later, having perfected natural pickling techniques, Bird in Hand olives and olive oil slipped onto the market, quickly earning for themselves an international reputation as South Australia's finest.
